Known for its lemurs, baobab trees and landscapes found nowhere else on Earth, Madagascar isn't always the first destination that comes to mind for food lovers. Yet one of the island's most rewarding discoveries is often found around the dining table.
Influenced by Southeast Asian settlers, African traditions, Arab traders and French heritage, Malagasy cuisine tells the story of Madagascar's rich cultural history. Rice sits at the heart of almost every meal while fresh seafood, zebu (a type of cattle native to South Asia), tropical fruits, vanilla, cocoa and spices all play a very important role in shaping the island's distinctive flavours.
For travellers looking to connect with Madagascar on a deeper (and tastier!) level, food offers a unique window into everyday life, local traditions and the warm hospitality for which the Malagasy people are known.
Flavoured rum & spices

Madagascar is renowned around the world for the quality of its spices. Vanilla, pepper, cloves and cinnamon have been grown and cultivated on the island for generations and play an important role in both Malagasy cuisine and the country's economy.
While vanilla may be the island’s most famous export, many of its spices feature in everyday cooking. Pepper is often used to season traditional zebu dishes and hearty stews such as Romazava, while cloves and cinnamon add depth to sauces, marinades and sweet treats like koba, a traditional Malagasy dessert made from ground peanuts, rice flour and banana leaves. Along the coast, spices are commonly paired with freshly caught seafood, creating fragrant dishes that reflect Madagascar's unique blend of African, Asian and European influences.
Beyond the dining table, spices have also become closely associated with another Malagasy favourite: rum. Across the island, locally produced rum is often infused with vanilla, cinnamon, cloves and pepper to create rich, aromatic blends, showcasing Madagascar's most iconic flavours. If you're offered a glass, don't be surprised if one turns into two - sharing a spiced rum is all part of the Malagasy way of bringing people together!
For travellers keen to explore this side of Malagasy culture, our Flavoured Rum & Spices Workshop offers a great introduction. Guided by a local host, this hour-long session allows guests to discover how spices are paired with locally produced rum before having a go at making their own personalised infusion.
The workshop then wraps up with a convivial tasting session, offering a memorable look into one of the island's most cherished traditions.
From bean to bar

Madagascar is also home to some of the world's finest cocoa, loved by chocolatiers for its purity, wonderful aromas and rich taste. Thanks to the island's climate and growing conditions, Malagasy cocoa has built a strong reputation internationally and is now used by chocolate makers around the world.
For those with a sweet tooth, our From Bean to Bar Workshop offers a delicious introduction to one of our most celebrated exports. Led by chocolate experts, travellers can follow the journey from cocoa bean to chocolate bar, learning about the origins of Malagasy cocoa and why Madagascar is a top cocoa terroir.
Guests get hands-on as they work with warm, aromatic chocolate to create their own bars and learn the art of coating ingredients in smooth Malagasy chocolate. By incorporating a variety of natural ingredients, participants create a personalised chocolate masterpiece, beautifully packaged at the end of the workshop and ready to take home or gift to someone special.
Lasting around two and a half hours, this immersive workshop offers a fun look into the world of chocolate making and a chance to experience one of Madagascar's most treasured products firsthand.
